Connecticut Restaurant To Serve New England Style “Fast Food”
As soon as this weekend, Norwalk, Connecticut will welcome a brand new player to their foodie scene – and it may just be a game changer.
Jay LeBlanc just launched his mobile wood fired catering business, Knot Norms Catering Co. in February. He had every intention of remaining focused on that endeavor, but when a restaurant space opened up at 10 First Street in East Norwalk, his plans changed.
LeBlanc decided he just couldn’t pass up the opportunity to expand his business, and thus, the eatery also bearing the name Knot Norms Catering Co. was born.
“It’s going to be a very local twist on New England seafood,” LeBlanc told The Hour. “It’s going to be an eatery, so eat in and to go.”
It may be fast, but the grub at Knot Norms will be a far cry from “fast food.” LeBlanc says a good 80% of the dishes will be served on New England style hot dog rolls – however, it’s what will be inside those rolls that counts.
The menu will feature locally-caught seafood, including oysters from Copps Island Oysters and clams from Bloom Brothers.
The Copps Island roll, is composed of deep-fried oysters, house-made tartar sauce, little gem lettuce and tomato on – you guessed it – a toasted New England hot dog roll.
Guests may also choose from fried chicken, crab salad, lobster, brisket and steak. Despite the rolls, there will be no hot dogs offered at Knot Norms.
LeBlanc is a Norwalk native who has always dreamed of opening his own business in the heart of the waterfront city.
Despite the overwhelming buzz surrounding the restaurant’s pending opening, he plans to continue with his wood fired catering business.
“I think we’re filling a void (in Norwalk),” he said. “I wanted to bring something fun, fresh and casual to this area.”
